Enchilada Casserole

Enchilada Casserole

1.5 pound burger
1 cup onion; chopped
2 teaspoon garlic; minced
1 can (16oz.) Salsa
1 can(16oz) refried beans
1 can(10oz.) enchilada sauce
1/2 cup sliced ripe olives
10-14 (6 inch) corn tortillas; sliced in half, divided
2 cups shredded mild cheddar cheese; divided

COOK burger, onion and garlic in large skillet until beef is browned. Stir in salsa, beans, enchilada sauce and olives. Cook and stir on low until warm.

Layer half of corn tortillas on bottom of greased 13 x 9-inch baking dish or 12" Dutch Oven.
Cover with half of meat sauce; sprinkle with 1 cup cheese. Repeat layers.
Bake @ 375, covered, for 40 minutes or until middle is cooked through.
Note: Using a 12" Dutch Oven - 14 coals ringed around top, 2 on either side of handle and 10 coals on bottom.

Yield: 6-8 servings
