What type of sausage do you recommend to use.

Any bulk sausage. I prefer pork and i generally use Jimmy Dean at camp because I buy it in large quantities. Wild game sausage is good, but doesn't have the fat content to make the tasty gravy with. I use game sausage for breakfast menus of sausage patties, pancakes and eggs.

ditto ... I usually use whatever breakfast sausage I have. I use Jimmy Dean at home. At the kid's camp, I use leftover Sysco sausage. I save sausage and the grease from an earier breakfast and then use the grease to make a roux. I grind the sausage before adding it to the gravy.
