Fixed this last weekend at the hunt club using ground venison.  Use meat that was from a hind quarter, cleaned, cubed and frozen since last winter.  After grinding it, made the chili, no one could tell it was venison.  This is another great receipe.  The brown sugar really makes it sweet and nice when combined with the spicy chili powder.  Thanks.
