Raisin Cake Recipe

I know eggs can be a precious commodity in a backcountry camp and that's one reason I like this recipe - it doesn't need any eggs. A good cake too!
2 cups raisins
2 cups water
2 cups white sugar
1/2 cup (1 stick) butter, cut in pieces
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
3 cups flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Powdered sugar for topping
In a large saucepan bring raisins, water, sugar, butter, cinnamon, nutmeg, and cloves to a boil. Reduce heat and simmer uncovered for 5 minutes. Remove from heat after 5 minutes and let cool completely.
Mix flour, soda, powder, and salt and stir into cooled raisin mixture. Beat a couple of minutes until well blended.
You can use either a 9" x 13" pan or a 12" dutch oven. Remember, the 9" x 13" pan and the 12" dutch oven are the same size in volume. In an oven, bake at 350 degrees for about 40 minutes. In the dutch oven, place 10 coals underneath and 20 coals on top. Bake for 45 - 50 minutes, depending on the outside temperature. When done top with powdered sugar. Hunters like this cake.

Seriously, that is a great recipe. I'll bet cream cheese frosting is fabulous on it. Hope you are feeling better. Can't have the P-burg bear under the weather

I was going to suggest it as a birthday cake for Cody, but since it's only a 9" x 13" pan,I know there would never be enough room for all those candles! Happy Birthday old timer. I saw you with that old man watch.

Gosh..........you are right about the birthday boy
I will have to make the lad a cake (in a couple of days)
He has to finish his angel food cake that he has now.
He is on an eggs benedict kick right now. Think I made that 4days in a row before we headed to the woods. That is why I had so many egg whites and Hellbilly gave me the angel food cake idea.
