Outfitter Employee or Independant Contractor?

When I worked as a guide here in Montana, I knew no outfitter who wanted to put me on his payroll as an employee. Instead I got an IC (Independent Contractor) license.  I got my liabiliity and commerical car insurance on my own. They gave me a 1099 at the end of the year and I took care of my own taxes etc.

Now that I'm cooking and not rowing or transporting people around I still have my IC license, but thought it might be prudent in this sue happy world, to buy some liability insurance. $500/year for $1M coverage. I'm thinking it will be worth the peace of mind.

What do other people do?
